Love exclusive flavours? We’ll also be spotlighting some of our latest limited-edition hot chocolate recipes so you can experience the essence of autumn in every cup.
Seasonal Signatures: Flavours That Define Autumn Chocolate
A union of richness and warmth, autumnal chocolates marry the dusky allure of quality cacao with the grounded comfort of spice, earth, and fruit. This is a pairing that’s generous and sweet — never sickly or synthetic.
How does the season find its way into every bite? It’s all thanks to the following staple ingredients:
Nuts and Seeds
A scattering of savoury crunch is the perfect addition to any autumn dessert or chocolate bar. Toasted hazelnuts bring a mellow, praline warmth. Walnuts add a faint bitterness, keeping sweetness in check. Pecans wrap you up like nature’s own buttery love note. And pumpkin seeds bring an earthy bite. Simple yet satisfying.
Spices
When it comes to autumn spices, cinnamon steals the show. Swooping in with its spicy, woody allure, it’s perfect for pairing with deep, dark 70% chocolate. Together, this dynamic flavour duo brings intensity, heat, bitterness, and just a touch of sweet — not for the faint-hearted, but certainly delicious. And let’s not forget ginger. Sharp, hot, and impossible to ignore, it’s the reason those fresh-from-the-oven gingerbread men are always too good to resist.
Fruits
Stewed apples, juicy currants, tart blackberries; autumn fruit is nature’s way of reminding us that sugar need not come from a packet. Apples bring a homely tang, dates bring a sticky, gooey chewiness, and the ultimate emblem of autumn — the pumpkin — (yes, it really is a fruit!) brings a comforting, subtle sweetness; the ideal stage for spice to strut upon.
Ideas for an Autumn-Inspired Chocolate Board
Ready to combine these signature autumn flavours? An autumnal chocolate board makes it easy. Invite people to lean in, pick, and nibble at will with these decadent autumnal treats:
Dipped Chocolate Figs: Quarter ripe figs and gently dunk the lower halves into glossy dark chocolate, melted using the bain-marie method or Velvetiser®. Our Classic 70% Hot Chocolate Flakes are ideal for this. Add a light dusting of cinnamon, then set them in the fridge until the skins look lacquered and the line is clean. Easy, yet oh-so elegant.
Plum & Spice Bark: A grown-up take on Rocky Road, chocolate bark is definitely having its moment. Melt creamy milk chocolate flakes, then swirl in cinnamon, cardamom, and thin dried plum slices. Finish with flaky sea salt cracked into fine shards. The sound alone is satisfying, but just you wait until that first bite hits. Divine.
Pumpkin Seed Snap: Melt Orange Hot Chocolate Flakes until glossy and velvet smooth, then scatter with chopped crystallised ginger, powdered ginger, lightly toasted pumpkin seeds, and a breath of orange zest. Once set, snap into irregular pieces. Each decadent morsel will bring a citrusy warmth with a hint of gentle spice, like a crisp autumn afternoon captured in chocolate.
Blackberry White-Tip Bites: For this simple autumn treat, lightly sugar blackberries before dipping just the tip in smooth, melted white chocolate. Our Vanilla-White Hot Chocolate Flakes will help to create the ideal tart-sweet contrast. Add a sprinkle of desiccated coconut and leave to set. These fruity blackberry bites will look like they’ve been kissed by winter frost.
For an eye-catching autumnal display, lay down your bark shards and pumpkin snap first, then tuck in bowls of nuts and ginger, nestling the figs and blackberries where hands naturally reach. Have a few chocolate drips and broken edges? Use them to fill in any blanks.
Finally, scatter curls of orange peel around the edges, add a star anise or two, and finish with a thready drizzle of maple over the bark. Ready for autumn feasting.
