The Victorians were the ones to fall in love with the distinctly bittersweet notes of rhubarb. Before it was widely viewed as a bitter plant which wasn’t fit for consumption. However, as sugar became more available and cheap, the two were paired together, resulting in an explosion in the rhubarb’s popularity.
For us, the paring of rhubarb and custard is a no brainer - the star of pies, puddings and crumbles, rhubarb demands an accomplice which can match its flavourful reputation. That’s why our zingy rhubarb filling is paired with an incredibly creamy custard - the mellow, fragrant notes of custard temper the sharpness of the rhubarb beautifully.
The best type of custard is one which has flecks of vanilla seed running through it. Not ones to shy away from quality, our custard is punctuated with these seeds to create a wonderfully aromatic vanilla taste. To capture the silky texture of the real stuff, we’ve used high-cocoa white chocolate and whipped cream to melt like the real thing.
