"I wanted to combine hazelnut and caramel in a different way: a thick layer of caramel with a pinch of Maldon salt to balance the sweetness, then a smooth hazelnut praline, blended with dark chocolate for a macho cocoa hit. Then I dropped a whole roasted Piedmont Hazelnut on top. It looks dramatic and tastes divine!" 







 







The Piedmont region of Italy, at the foot of the Alps, is famed for the quality of its hazelnuts, which have been granted a denomination of origin status by the EU. Native to Italy, the hazel tree is a major part of the local economy and culture, and has been for centuries – Frangelico, a hazelnut liqueur, was created here around 300 years ago. Piedmont hazelnuts are prized around the globe not just for the quality of their flavour and aroma after roasting, but also for their long shelf life.
