Easter is a holiday synonymous with chocolate. While the opportunity to indulge in rich, creamy chocolate is a treat we embrace wholeheartedly, those Easter eggs can soon pile up, leaving you with more chocolate than you know what to do with. If you find yourself with an excess of Easter chocolate, don’t worry. There are plenty of creative ways to use up your leftover eggs, bunnies, and festive nibbles — and create something irresistible. Enter: our Easter egg recipes. 

Not only will you be reducing food waste by using up your remaining Easter chocolate but you’ll also be satisfying your cacao cravings. Here are four Easter egg baking recipes that are sure to delight.

Chocolate Brownies

Have you ever noticed that Easter eggs taste different from other chocolate? As we explored in our recent article, this could be linked to the shape and texture of Easter chocolate. Regardless, a leftover Easter egg makes an excellent addition to a variety of chocolate brownie recipes.

All you need to do is chop up your leftover Easter chocolate and incorporate it into your favourite brownie mix before baking. It’s sure to bring a decadent melt-in-the-mouth texture. Why not experiment with nuts or dried fruit to add a crunchy, chewy element?

To make quick and easy three-ingredient brownies, courtesy of Delicious, you’ll need:

  • 600g of your leftover Easter eggs (our caramel and praline Quail Eggs bring a delightful aroma and flavour)
  • 4 eggs
  • 150g of self-raising flour

Simply blitz the chocolate eggs in a food processor, then add the (real) eggs and flour and blitz again until smooth. Pour the batter into a cake tin and place it in a preheated oven at 160℃ oven for 25 minutes until firm at the edges and slightly wobbly in the centre. Serve warm with a scoop of ice cream for the ultimate post-Easter dessert. 

Easter Rocky Road

This classic dessert is a crowd-pleaser that’s perfect for both adults and little ones. Made with a combination of leftover mini eggs and a variety of add-ins, Easter rocky road is a fun and easy recipe. It’s ideal for making use of any excess sweets, nibbles, or nuts that you may have in your cupboards.

To make Easter rocky road, you’ll need the following ingredients:

  • 225g dark chocolate
  • 100g unsalted butter
  • 2 tbsp cocoa powder
  • 2 tbsp golden syrup
  • 100g rich tea biscuits
  • 50g mini marshmallows
  • 50g dried cranberries
  • 200g chocolate eggs – try our Speckled Eggs for added flair

Start by lining a 20cm by 30cm traybake tin. Then melt the chocolate and butter in a large bowl set over a saucepan of gently simmering water.

Remove your pan from the heat and add the cocoa powder and golden syrup to your chocolate-butter combination.

Stir until fully combined and leave the mixture to cool at room temperature for about 15 minutes. While it’s cooling, crush the biscuits.

Add your biscuit crumbs to the chocolate mixture, along with the marshmallows, cranberries and 150g of the chocolate eggs. Don’t worry if the eggs break slightly — this will all add to the texture.

Pour the mix (it should be nice and thick) into your baking tin and scatter over the remaining chocolate eggs. Press the eggs in a little, and leave the whole lot to set in the fridge for an hour.

Once set, you can cut up your rocky road into squares. Why not experiment with different flavours to make it to your taste? From raisins and hazelnuts to Dark Chocolate Ginger Puddles, you can give your Easter egg bake a unique twist.

Make your own hot chocolate

Spring might bring sunshine and warmer weather, but a comforting mug of hot chocolate is perfect all year round — not just in the winter. 

By melting your Easter chocolate, you can create a smooth and glossy hot drink ideal for a bit of evening relaxation. We previously wrote an article on making hot chocolate using a chocolate bar, and you can apply the same techniques to your Easter egg.

You’ll need to finely chop your Easter chocolate for this recipe. The more even the size of your chocolate pieces, the more evenly they will melt, so you might like to try grating. You can then melt your grated chocolate in a bain-marie with some milk — add a drop of cream for extra decadence. Pour the velvety mixture into your favourite cup, sip, and savour.

Depending on your preference — and what chocolate you have left — you can use any flavour or variety. Having said that, we do recommend sticking to Easter eggs with a high cacao butter content. This will provide the most satisfying melt.

Chocolate Chip Cookies

Chocolate chip cookies are a classic treat that never gets old. They’re also incredibly versatile, meaning you can mix and match ingredients depending on what you have available.

BBC Good Food has an excellent Easter egg chocolate chip cookie recipe that we highly recommend. This one uses classic sugar-shelled mini eggs (such as our Speckled Eggs). However, you could also experiment with eggs of different textures. For example, you could try adding in a smooth, creamy Easter egg, like slices of our Salted Caramel Tiddly Eggs. Alternatively, you could add a bit of crunch with our Extra Thick Rocky Road to Caramel Easter Egg, which contains crisp puffed rice and extra cookie pieces.

Once your cookies are out of the oven, add a drizzle of melted chocolate or a sprinkle of sea salt on top for a beautiful finishing touch.
