How to make some of our favourite Cocao cocktails at home

To celebrate the launch of our innovative new cocoa bitters, we’ve decided to share some of our best-loved cocktail recipes, as perfected by our dedicated mixologists in our Borough Market bar and restaurant – Rabot 1745.

Our cocoa bitters really help to bring together the sweet and sour elements of any recipe, while also providing a unique flavour to the drink. We’ve worked hard on creating a list of classic cocktails where the use of cocoa helps to enhance the subtleties of the base spirits and bind the drinks together, especially in the Rabot Rum Sour which is a firm favourite here.

1) Cocoa Gin Martini:

Ingredients Method Finishing Touches
50ml Cocoa Gin
25ml Orange Curacao
3 dashes Cocoa Bitters
Put the gin, orange juice and ice in a cocktail shaker. Shake and pour the cocktail through a strainer into a Martini glass. Finish with a twist of orange.

2) Rabot Martini:

Ingredients Method Finishing Touches
75ml Vestal Vodka
4 dashes cocoa bitters
Stir the ingredients in boston glass with ice until they’re properly diluted. Strain into martini glass. A twist of lemon

3) Exclusiva Old Fashioned:

Ingredients Method Finishing Touches
50ml Diplomatico Exclusiva
10ml Pedro Ximenez
3 dashes of Cocoa Bitters
Stir all ingredients in boston glass with ice until  properly diluted. Pour over cube ice in rocks glass.
