If you’ve ever melted luxury chocolate, you’ll know that it has an irresistibly thick and decadent texture that’s perfect for fondue dipping. However, to get the lustrous, flowing consistency needed for a chocolate fountain, you’ll need to thin the melted confection out a little.

One way you can do this is to add vegetable oil to your melted chocolate. For best results, look for chocolate with a high cocoa butter content. Not only will this taste richer and more satisfying, but it will require less additional oil than low-quality chocolate.

As a general guide, adding 60ml of oil per kilo of high-cocoa chocolate will give you a silky-smooth texture. If you prefer the flavour, you can use coconut oil in place of vegetable oil.

How to melt chocolate for a fountain

To prepare your chocolate for a fountain, you’ll need to first make sure you’ve got plenty to keep your guests going! Depending on the configuration of your chocolate fountain, you may have minimum and maximum fill lines, so make sure you don’t add more than the machine can handle.

Once you have your chocolate weighed out, you can melt it in the microwave or in a bain-marie on the hob. If you use a microwave, heat in 30-second blasts and stir often to avoid scorching. After your chocolate has melted, stir in the right proportion of oil and stir thoroughly.

When the mixture is smooth and glossy, it’ll be ready to add to your fountain, which will keep it hot and flowing throughout your gathering. All you’ll need to do is make sure the foodie bits are topped up.
