We’ve ground gently roasted hazelnuts into a delectably smooth filling - it may already be delicious on its own, but we wanted to add a little textural pizzazz. We decided to stir in some crispy feuilletine flakes to add a lightness to the centre, as well as incorporating a satisfying crunch.
Feuilletine is a type of French wafer that is renowned for its buttery melt and aftertaste of caramelised sugar. The authentic type - like the ones we’ve used - have barley in them, which gives the flakes a rich, malty flavour - an ideal backdrop for the sweetness of our hazelnuts.
To add a twist, we’ve enrobed this classic in our less-sweet 50% cocoa milk chocolate, so you get the richness of the cocoa without losing any of the indulgent creaminess you love. Sink your teeth through the smooth chocolate to find an explosion of crispy, malty feuilletine with its hazelnutty bedfellow becoming more prominent with every bite.
