You’ve heard of dark chocolate and mint - but are you familiar with white chocolate and mint? Although a rarer combination, we think the freshness of the mint cuts through the opulence of rich cocoa butter, making it a beautifully balanced slab of chocolate.
We make our white chocolate with a minimum of 36% cocoa butter to give it an astonishing melt. Cocoa butter is the natural fat that is extracted when we press the cocoa bean, and is the ingredient that makes your chocolate melt at 37?, or as soon as it touches your tongue. This results in a smooth, silky chocolate with the nuanced and delicate flavour of cocoa butter.
We’ve given this white chocolate slab a bit of a pick-me-up by infusing it with peppermint oil and adding mint crisps and snippets of mint leaves. The peppermint oil gives the chocolate a bright lift in flavour, and the naturally minty additions add a playfully contrasting texture to the creamy chocolate.
