Is white chocolate even chocolate? Of course it is - at least the way we do it. Unlike many other brands of white chocolate, we make sure that cocoa is the star - not the cocoa powder, but the cocoa butter takes centre-stage.
Cocoa butter is the natural fat extracted from the cocoa bean when it is pressed. With a melting point of around 37?, it is the ingredient that gives your chocolate - dark, milk or white - the smooth melt which characterises our chocolate. We use a minimum of 36% cocoa butter in all of our white chocolate, giving it an indulgent texture and an astonishing melt.
We blend the cocoa butter with milk and sugar, but unlike many other white chocolates on the market, we don’t add any vanilla flavouring. We only add vanilla flavouring if we want to add the subtle fragrance of vanilla. This white chocolate slab contains cocoa butter only as the key flavour - this is because we wanted to give the delicate, nuanced flavours of cocoa butter the chance to shine through with no distractions.
