Salmon & Mascarpone Cocoa Pasta Recipe
Cook the pasta for 9 minutes drain and return to the pan.
Spoon in approximately 2.5 generous tablespoons of mascarpone cheese and stir until the pasta is covered.
A dd the smoked salmon, torn basil leaves and grated parmesan cheese.
Serve in pasta bowls and finish off with a basil leaf.

- 2 ½ tbsp mascarpone cheese

This was SO easy, yet tasted very expensive. It was the first time I've used the cocoa pasta, and wasn't sure what to expect - so often, you try something, only to discover it tastes nothing like what it claims to be, but the pasta does definitely taste of chocolate! The combination of flavours (chocolate & smoked salmon) probably shouldn't work, but it does, and the dish was colourful (although we don't like basil, so we omitted that). Next time, I'd probably add the smoked salmon last, as it seems to be cooked by the heat, but it certainly wasn't spoilt for that. Very, very tasty indeed, and, unlike many recipes which claim to be "quick," this was certainly ready within 30 minutes.
