First things first. Known for its bold tartness, cranberry takes centre stage in a jammy compote base. Next up, a super-smooth layer of ganache; we tempered cranberry's natural sharpness by folding it into real whipping cream. And for the cranberry on top? A solid cap of creamy white chocolate imbued with a pink cranberry blush.

All three layers are then served within a smooth dark chocolate cup. We experimented with white and milk chocolate grades, but it was our signature 70% dark with its nuanced cacao notes that really held its own alongside cranberry's naturally bold profile.
