Post-dinner mints are a soirée staple, and when combined with rich dark chocolate, they make for a decadent way to round off an evening. That’s why in our new Dark Peppermint chocolate recipe, you’ll find not one, but two forms of mint-infused dark chocolate.
To make this our deepest, darkest mint chocolate yet, we take silky smooth ganache, made with 80% dark chocolate, and add a drop of peppermint oil.
The peppermint in this recipe hails from the vast, unspoiled Tasmania, where they select the freshest mint leaves to craft an invigorating peppermint oil. The 80% dark chocolate, meanwhile, was specifically chosen by our chocolatiers for this recipe because it offers a not-too-sweet, not-too-intense dark chocolate base that allows the peppermint to sing.
But we didn’t stop there. To seal in all that gloriously dark mint zing, we took our signature 70% dark chocolate and added another drop of Tasmanian peppermint, before cloaking the ganache.
As for texture, we purposely selected a slender profile for this recipe to ensure a satisfying ‘crack’ of dark chocolate, followed by a wave of silky ganache, for the perfect ratio of solid-to-creamy chocolate.

Of course, you could simply keep them yourself for a soothing cacao moment all of your own (we won’t tell).
