For us, the flavour of coconut takes us to faraway, tropical islands. The warm beaches, the fruity drinks, the soothing shade of a coconut tree - perhaps these images are the reason why we love it so much! Our sun-kissed creamy milk chocolate coconut truffles are a way of paying our respects to the humble coconut.
Coconut boasts a flavour like no other, and this fruit is so popular that it even has a whole day dedicated to it in September! We wanted to do the creamy, aromatic flavours of the coconut justice, which is why we used both coconut milk and desiccated coconut to create our milk chocolate coconut truffle. An incredibly light ganache boasts the silkiest of textures, ribboned with pieces of desiccated coconut to add a delightful chewy texture.
We’ve coated our truffles in a thick layer of 40% milk chocolate to add a creamy, mellow taste to our Chocolate Coconut Truffles Selector. We use a high amount of cocoa in our milk chocolate to ensure none of the nuanced, delicate notes of the cocoa bean are lost, whilst ensuring we balance our chocolate with the right amount of sugar. At Hotel Chocolat, we follow the mantra ‘more cocoa, less sugar’, as sugar tends to dim the intricate flavours of the cocoa bean.
Rolled in dried coconut for a little nibbly texture, these coconut chocolate bombes are a dream for those who adore the coconut and the cocoa bean alike.
