What is chocolate ganache?

Chocolate ganache is a decadent, rich filling commonly used to fill truffles and ice cakes. Ganache combines melted chocolate and cream, creating a decadent sauce. Because ganache contains cocoa solids (or cocoa butter in the case of a white chocolate version), it’s thicker than icing, making it a satisfying addition to desserts.

What flavours go well with white chocolate ganache?

White chocolate ganache has a much creamier texture than milk and dark varieties. Sometimes, less is more. And when it comes to white chocolate ganache, a simple casing of white chocolate is just the ticket. You can’t go wrong with our Simple White Chocolate Truffle Selector – elegant and mellow, these morsels are ideal for evening nibbling.

The creaminess of white chocolate ganache also pairs beautifully with vibrant, tangy fruits. Our White Chocolate Mango Selectors showcase the perfect balance of mellow white chocolate and the exotic sharpness of the mango.

Ways to incorporate white chocolate ganache

Ganache may seem like something best left to the chocolate experts. But surprisingly, there are many ways you can incorporate white chocolate ganache in your home baking for that added dose of decadence. It really is quite a simple ingredient!

1. Make a show-stopping drip cake

The general rule of thumb for dripping ganache is the ratio of three parts full-fat heavy whipping cream and one part white chocolate. You can use it to add a fabulous drip effect to iced sponge cakes.

  • To make your white chocolate ganache, first bring the cream to boil. Pour it over your white chocolate.
  • Once you’ve done that, stir the mixture and allow it to cool to room temperature.

Essentially, the key to the perfect white chocolate ganache is time, so it may take a couple of tries to get the consistency just right.

You’ll want to use quality white chocolate for your ganache. We recommend our White Chocolate Slab Selector for melting. Unlike other brands, we don’t overload our white chocolate with vanilla or sugar. We only use only the finest cocoa butter to ensure smoothness is delivered with every bite.

Once your ganache has cooled to the right consistency, drip it over the edge of your cake first. Take care with this step, pooling all of the mixture on top of the cake will limit the amount of control you have over where your ganache falls.

And voila! The finished result is an eye-catching drip cake with a big impact. The perfect showstopper for your next birthday party.

2. Make your own white chocolate truffles

Small treats make for a big delight. When making ganache for truffles, the consistency needs to be much thicker than for dripping.

  • Make your mixture with three parts white chocolate to one part heavy whipping cream.
  • Leave the ganache to cool to room temperature.
  • Scoop out into balls and roll smooth.

You could dip the truffles into nuts or coconut flakes to finish. The choice is yours!

This simple recipe means you can get really creative with truffles, you don’t just have to stick with classic white chocolate. Our wide selection of white chocolate includes the likes of Mojito Chocolate Truffles and Lemon Truffles. Why not mix up your tastebuds with a zingy twist or alcoholic tipple for a delicious added extra?

3. Add a white chocolate twist to your Tiramisu

For your Italian favourite dessert, swapping out the intense dark chocolate with white chocolate ganache makes for a more mellow, subtly-sweet twist on the classic. The gooey richness of the ganache creates a sumptuous dessert.

You can use this Tiramisu with White Chocolate recipe from TastyCraze as a base.

A key ingredient in tiramisu is the coffee-soaked ladyfingers – not to mention the layers of egg, sugar and cocoa-flavoured mascarpone on top to make this delicious ensemble. 4. Whip up a white chocolate ganache milkshake

This one might seem a little adventurous, but a white chocolate ganache milkshake is just a simple upgrade with a luxurious edge.

For the ganache, you’ll need:

  • 150g of white chocolate (melted)
  • 80ml of heavy cream

For the milkshake, you’ll need:

  • 625ml of milk.
  • 2 tbsp vanilla bean paste.
  • 3 scoops of vanilla ice cream.
  • First things first. Combine your melted white chocolate with the heavy cream, brought to a boil, and then let the mixture cool a little.
  • Next, line the inside of your milkshake glass with ganache.
  • Once that’s done, combine your milkshake ingredients together in a blender and pour into the ganache-lined glass.

And there you go! For this mega milkshake, you could even experiment with some more playful white chocolate flavours like our White Chocolate Cookies and Cream Selector for a biscuity, sundae-style crunch.
