Our talented chocolatiers have skilfully combined contrasting textures and deep cacao notes with bold fruit zing to create layers that blend harmoniously. Bite into the smooth, 70% dark chocolate cloak to unleash two distinct yet complementary layers of taste and texture.

First, the bold sharpness of orange compote, with notes of bitter citrus for an authentic marmalade experience. Then, to complement the compote’s smooth texture and bring out the bitter orange notes, we add a layer of dark, delicately crispy hazelnut praline.

Crafting the praline comes in three stages. First, we fold in 70% dark chocolate to deepen the roasted hazelnut notes. Then we add some texture courtesy of feuilletine: caramelised pancakes, baked until crisp, then crushed into flakes. Finally, we add a drop of bitter orange oil to bring the praline and compote into zesty harmony.

We selected our signature 70% dark chocolate for both the praline and the outer layer for its ability to elevate the zingy compote, whilst also bringing nuanced cacao notes in a smooth, not-too-intense finish.
