Rabot Eco-Escape, formerly known as Boucan
Reconnecting with nature by way of open-air architecture, sustainable earthy materials and organic, eco-conscious practices is all part of the ethos of our Saint Lucian idyll. And so it was that as of July 2020, we found ourselves unifying under a moniker that captured this spirit.
“Relaxed and ready for refreshment, there was only one place to head: Boucan, the cocoa plantation, restaurant and hotel of British chocolatier Hotel Chocolat. The Boucan restaurant sits on a platform overlooking Petit Piton, with a menu that incorporates cocoa beans in nearly every dish, from the butter and chocolate balsamic reduction served with bread, to roti filled with tangy, cacao nib-infused chicken. There are even chocolate-themed treatments at the 14-room hotel’s spa.” – Evening Standard Online
“The first thing that comes to mind when you think of hotels and chocolate is undeniably Hotel Chocolat. Boucan by Hotel Chocolat sits right in the heart of the Rabot Estate in Saint Lucia, surrounded by cocoa groves and lush countryside. Pretty much every dish in the restaurant contains cocoa in one form or another, and there’s a huge array of experiences for guests including chocolate-making classes and tours around the estate.” – Telegraph.co.uk
“I visited nearby Hotel Chocolat for lunch. The property is part of the British chain of chocolate retailers, which was actually called Hotel Chocolat before the Saint Lucia property existed, although the island has a long history of producing cacao. There are only 14 rooms at the luxury hotel, but many who aren’t staying there come to dine at Boucan, the onsite restaurant, or take an immersive class on how to make bean-to-bar chocolate. The highlight of my meal was obviously dessert, the Chocolate Genesis ($18), which includes nine different tastes of different chocolates.” - New York Daily News

“We chose to stay 5 nights at Boucan and hold our wedding ceremony on the estate. My husband and our guests agree that we couldn’t have chosen a better spot for our nuptials. We found the grounds easy to navigate, perfect for our mixed group of couples, friends, and family, and still romantic and secluded enough for us, the newlyweds.”

“Can’t get any better than a hotel on a cocoa plantation located in the best part of St. Lucia, Soufriere. Chic property, delicious food for foodies, much-needed cocktails at the cool bar, helpful staff. Walking distance to Ladera. We got shuttled to nearby Sugar Beach at the Viceroy. Four-day stay was way too short... will definitely return for spa, sulphur springs, Tree-to-Bar Experience, Piton hike... and definitely stay in Boucan again to rejuvenate!”

“We have been lucky enough to spend 3 amazing nights and have had a wonderful time. The lodges are simple elegance, lots of lovely little touches and thoughts. The food is it breakfast lunch or dinner has been exceptional and unique. The staff is attentive, nothing is too much trouble and there is always a smile. The kitchen is so calm and quiet! Don’t know how that’s achieved! The musician was a lovely addition and added even more to an enjoyable meal. The tours by Cuthbert and the chocolate-making with Chef Ron were brilliant.”

“Thank you hotel chocolat for an all-around wonderful stay and experience in St. Lucia. We spent the week here for our 10-year anniversary. The food was amazing, delicious, creative, fresh and most satisfying. We loved the Tree-to-Bar Experience, gaining insight on the whole cocoa process and appreciate the Engaged Ethics efforts of HC. We loved the lodge and little details and touches. The infinity pool was a welcome refreshing place to go each day. The spa treatment exceeded my expectations, engaging all the senses and completely relaxing. We will likely still be remembering and savouring the various foods for years to come. Thank you to the staff for all their care and service.”

“As Hotel Chocolat club members and chocoholics, the Boucan was always on our wish list. It turned out to be nothing like our expectations and I don't mean that to sound bad. Think of the Boucan as a working cocoa plantation with a fabulous restaurant and some gorgeous rooms. It is not a resort hotel which is a good thing and we felt that we were in a retreat surrounded by nature and chocolate. Our room was big and airy with a lovely superking bed. Hubby says it was a luxury tree house in a tropical rainforest. The staff were around but didn't bother us and did everything they could to help if we needed anything. Breakfast was always amazing with fresh fruit from the plantation and a nice selection to choose from on the menu including the newly introduced daily specials. The highlight of our stay was the Tree to Bar experience with Merle. She was so knowledgeable and made it fascinating. We learned so much about chocolate and gained a new respect for the beloved bean. We would not hesitate to go back to this hotel in future. It is, as so many have said, perfect for relaxation.”

“My wife and I stayed here for a fortnight recently, following a fatiguing year that had left us both drained. Boucan by Hotel Chocolat is the perfect tonic and we returned home thoroughly rejuvenated and deeply contented. Everything is 'right'. The accommodation is top notch. We stayed in one of the deluxe villas with fantastic views. The rooms are open-gabled which allows breeze to flow through and naturally cool the room. Sleeping with the patio doors open, listening to the sounds of the jungle and the occasional tropical downpour, was for us a deeply restful experience. The rooms are all completely private, the en-suites include a private but open air shower, the rooms are thoughtfully supplied with mozzie repellent and re-supplied daily with coffee, chocolate and cookies produced on the estate. The infinity pool is placed perfectly for the views and reflections and we loved swimming up to the edge and peering over the lip to watch the hummingbirds feeding on the flowers below. Oh, and the restaurant? Some of the best food you will taste anywhere on the planet, healthily influenced by chocolate of course! Sydney the head chef leads a talented and merry band in the open kitchen, producing some fantastic and memorable dishes. Over our fortnight there we sampled virtually the entire menu and found every dish to be beautifully thought through. We could go on about this place endlessly. Suffice to say you will not be disappointed by a visit or a stay here. We will definitely return.”
– Mr and Mrs House.
“Back in May 2007, my wife’s parents took us on a once-in-a-lifetime holiday to Saint Lucia. As members of the Chocolate Tasting Club, we took the opportunity to contact Phil Buckley about the possibility of a site visit to Rabot Estate. We were pleased to be allowed to come along to see first-hand the work going on to restore this old plantation. When we arrived, the carpenters were still working on the main building, and we recall the lovely lady who served us a chocolate drink. We were treated to a short tour and an explanation of the cocoa production process before being invited to splice some new cocoa saplings onto root stock. I made my attempts under the watchful gaze of two of the members of staff. I often wonder whether the saplings survived and are now producing cocoa pods for Hotel Chocolat. Whenever we receive anything about the Rabot Estate, we always recall our wonderful visit.”
