Peanut Butter Selectors Collection

Peanut butter - should it be smooth or crunchy? We’re not quite able to decide, which is why we opted for a compromise, combining crunchy peanut butter praline in a smooth 40% milk shell. Some may prefer peanut butter as a savoury option, but we think it works just as well when served sweet.

We took inspiration from the scents and tastes of a fragrant, freshly baked peanut butter cookie for this treat. Warming cinnamon adds a subtle spice, and a sprinkle of sea salt cuts through the natural sweetness. We opted for a peanut milk praline as well, to capture all the toasty notes of roasted peanuts.

Encasing our praline is 50% milk chocolate. We decided to go 10 percent higher than our classic 40% milk to add an extra depth of flavour. The deep, yet mellow, cocoa notes bring out the roasted, somewhat smoky undertones of peanut.

Other chocolatiers may opt for a lower cocoa percentage, but we think that the chocolate should always shine: anything less than 40% and you may end up with an overly-sweet milk chocolate that doesn’t hold its own against other flavours.
