Creation Food + Drink Rabot 1745

A red carpet build up

Paparazzi lined the red carpet for this year’s BAFTA award ceremony. A glittering event with some very worthy winners.

On Sunday, February 18th London’s Royal Albert Hall played host to a gathering of the world’s brightest stars. Big winners on the night were Gary Oldman (Leading Actor, Darkest Hour) and Frances McDormand (Leading Actress, Three Billboards) all presided over by a new host, and national icon, Joanna Lumley. She replaced the almost irreplaceable Steven Fry.

Winner for eighth year running: our BAFTA dessert

Golden masks handed out and lives and careers changed forever, the attendees were whisked away to the renowned BAFTA dinner at Grosvenor House Hotel. Taking pride of place for the eighth year running was a dessert from our own chef David Demaison.

The winner is… David’s spectacular dessert, Nicaragua 76% Supermilk took centre stage in a cocoa-rich milk chocolate mousse. Supermilk is a revolutionary approach which pushes the boundaries of milk chocolate into new, unchartered high-cocoa territory. Starring our salted caramel ganache, crispy sesame and nigella seed fascinator and dark chocolate flourish.

A word from its creator…

“I wanted a specific chocolate for this dessert, so I spoke with Emma about creating one. It had to be the right cocoa bean. She suggested Nicaraguan Chuno, surprisingly smooth and creamy for 76% with a lovely, long cocoa finish. The chocolate is the star in a smooth pebble mousse. The flavours are amazing together, nigella seeds for slight bitterness, salted caramel and our bespoke chocolate.”

“For the BAFTA dessert it had to be single-origin northern Nicaraguan cocoa, with a savoury profile, notes of toasted sesame and a treacle finish. More milk than sugar. Originally created for the BAFTAs, it stormed through our Tasting Meetings, we had to add it to our Rare & Vintage range.”
