Pork or Chicken with Cocoa Balsamic and Chilli Marinade Recipe
Preparation Time: 10 minutes, plus marinating
Cooking Time: 10–20 minutes
Mix together the cacao chilli oil, cacao balsamic vinegar, coriander seeds, ground cumin, ground ginger and lemon juice, then season with salt and pepper.
Put the pork or chicken in a non-metallic dish and spoon the marinade over the top. Cover and leave to marinate overnight in the fridge.
The next day, preheat the grill (broiler) to high. Remove the pork or chicken from the marinade and grill (broil), turning once, until golden and cooked through, about 10 minutes for the pork and 20 minutes for the chicken.
