The property is part of the British chain of chocolate retailers, which was actually called Hotel Chocolat before the Saint Lucia property existed, although the island has a long history of producing cacao. There are only 14 rooms at the luxury hotel, but many who aren’t staying there come to dine at Boucan, the onsite restaurant, or take an immersive class on how to make bean-to-bar chocolate. “As Hotel Chocolat club members and chocoholics, the Boucan was always on our wish list. It turned out to be nothing like our expectations and I don't mean that to sound bad. Think of the Boucan as a working cocoa plantation with a fabulous restaurant and some gorgeous rooms. It is not a resort hotel which is a good thing and we felt that we were in a retreat surrounded by nature and chocolate. Our room was big and airy with a lovely superking bed. Hubby says it was a luxury tree house in a tropical rainforest. The staff were around but didn't bother us and did everything they could to help if we needed anything. Breakfast was always amazing with fresh fruit from the plantation and a nice selection to choose from on the menu including the newly introduced daily specials. The highlight of our stay was the Tree to Bar experience with Merle. She was so knowledgeable and made it fascinating. We learned so much about chocolate and gained a new respect for the beloved bean. We would not hesitate to go back to this hotel in future. It is, as so many have said, perfect for relaxation.”

“My wife and I stayed here for a fortnight recently, following a fatiguing year that had left us both drained. Boucan by Hotel Chocolat is the perfect tonic and we returned home thoroughly rejuvenated and deeply contented. Everything is 'right'. The accommodation is top notch. We stayed in one of the deluxe villas with fantastic views. The rooms are open-gabled which allows breeze to flow through and naturally cool the room. Sleeping with the patio doors open, listening to the sounds of the jungle and the occasional tropical downpour, was for us a deeply restful experience. The rooms are all completely private, the en-suites include a private but open air shower, the rooms are thoughtfully supplied with mozzie repellent and re-supplied daily with coffee, chocolate and cookies produced on the estate. The infinity pool is placed perfectly for the views and reflections and we loved swimming up to the edge and peering over the lip to watch the hummingbirds feeding on the flowers below. Oh, and the restaurant? Some of the best food you will taste anywhere on the planet, healthily influenced by chocolate of course! Sydney the head chef leads a talented and merry band in the open kitchen, producing some fantastic and memorable dishes. Over our fortnight there we sampled virtually the entire menu and found every dish to be beautifully thought through. We could go on about this place endlessly. Suffice to say you will not be disappointed by a visit or a stay here. We will definitely return.”

“Back in May 2007, my wife’s parents took us on a once-in-a-lifetime holiday to Saint Lucia. As members of the Chocolate Tasting Club, we took the opportunity to contact Phil Buckley about the possibility of a site visit to Rabot Estate. We were pleased to be allowed to come along to see first-hand the work going on to restore this old plantation. When we arrived, the carpenters were still working on the main building, and we recall the lovely lady who served us a chocolate drink. We were treated to a short tour and an explanation of the cocoa production process before being invited to splice some new cocoa saplings onto root stock. I made my attempts under the watchful gaze of two of the members of staff. I often wonder whether the saplings survived and are now producing cocoa pods for Hotel Chocolat. Whenever we receive anything about the Rabot Estate, we always recall our wonderful visit.”
