Ingredients
- 2 Venison steaks*
- 1.2 oz Butter
- 2 Cloves Garlic
- 1 cup Red wine
- 1.5 Tbsp Macho Liquid Chocolat or Hacienda Iara 100% Organic Dark Chocolate Purist bar
- Salt and Pepper for seasoning
Method
- Pan fry the steak on both sides in just over half the butter and all of the garlic (keep the venison rare to medium-rare), seasoning with salt and pepper to taste. Set aside to rest.
- De-glaze the pan with red wine (quite a bit) burn off the alcohol and let reduce a bit.
- Stir in the remaining butter and grate in the cocoa.
- Stir until melted and well blended and pour over steaks.
Serving Suggestions
Serve with woodland mushrooms lightly fried in garlic and butter, and braised red cabbage.
