Venison Steak in a Rich Chocolaty Red Wine Sauce

The rich, earthy autumn flavors in this quick recipe combine for a deeply satisfying, impressive dish – perfect for a dinner party, or cozy meal for two.

Ingredients

  • 2 Venison steaks*
  • 1.2 oz Butter
  • 2 Cloves Garlic
  • 1 cup Red wine
  • 1.5 Tbsp Macho Liquid Chocolat or Hacienda Iara 100% Organic Dark Chocolate Purist bar
  • Salt and Pepper for seasoning

Method
  • Pan fry the steak on both sides in just over half the butter and all of the garlic (keep the venison rare to medium-rare), seasoning with salt and pepper to taste. Set aside to rest.
  • De-glaze the pan with red wine (quite a bit) burn off the alcohol and let reduce a bit.
  • Stir in the remaining butter and grate in the cocoa.
  • Stir until melted and well blended and pour over steaks.

Serving Suggestions

Serve with woodland mushrooms lightly fried in garlic and butter, and braised red cabbage.
