Sweetheart Chocolate Shortbread

Treat your sweetheart to traditional British shortbread cookies with a chocolate twist.


Makes 12
Standing time: 1 hour
Special equipment needed: Heart cutter, piping bag
Oven Temperature: 325°F

Ingredients

9oz Plain Flour
8oz Butter
3oz Powdered Sugar
1oz Cocoa Powder
3 ˝ oz of Milk Chocolate for Anything
3 ˝ oz of White Chocolate for Anything

Method

1. Preheat oven to 325°F.
2. In a large bowl, cream the butter using an electric mixer, gradually beat in the sugar until the mixture is light and fluffy.
3. Gradually sift the flour and cocoa powder into the mixture and blend to produce a soft cookie dough.
4. Lightly dust your kitchen work surface and rolling pin with flour.
5. Place the dough on the floured work surface and roll it to a thickness of about ˝ inch. Then use a heart-shaped cutter to cut out cookie shapes. You should be able to make 12 cookies, though you may need to roll the dough between cuts.
6. Place biscuits onto a well greased baking tray.
7. Bake for 40 minutes.
8. Allow to cool fully before removing from the tray.
9. In the microwave, melt the milk and white chocolate one at a time in separate bowls – heat in 30 second blasts, stirring between each one to ensure chocolate does not burn.
10. When chocolate is melted spoon into a piping bags and pipe stripes of each chocolate onto biscuit. Lightly drag a fork across the surface of the biscuit to create a marble affect.
11. Leave to cool, try one for yourself, then serve to loved ones.
