Cienaga is a rare Trinitario cocoa variety from the Sierra Nevada region of northern Colombia. Here, indigenous peoples farm its fertile valleys to produce some of the world’s greatest cocoa. We roasted the fermented beans to bring out notes of white-grape raisins and apricots.
