Ingredients
- 2 whole eggs
- 1 1/2oz plain flour
- ½ oz cocoa powder
- 5floz milk
- 1oz sugar
- 1oz of Liquid Chocolat
- Good quality vanilla ice cream
- Blueberries, sliced strawberries or raspberries
Method
- Beat together eggs and milk
- Mix in sugar and cocoa powder, then flour.
- Pass through a sieve to remove any lumps and chill for 2 hours.
- In a small frying pan, heat a knob of butter until it’s sizzling.
- Ladle the batter into the pan to create a thin layer, covering the base
- When the top of the crèpe begins to firm up, flip over and cook other side for about 2 minutes. If the crèpe sticks to ceiling, peel off and start again…
- Sprinkle a fine layer of Liquid Chocolat over pancake, allowing it to melt slightly.
- Remove from heat and set aside. Repeat this method of making crèpes until you’ve used all of the crèpe batter.
- When all the crèpes are cooked, use a 3 or 4 inch round cutter to cut out small crèpes rounds.
Serving Suggestions
Place one crèpe round in the center of a small plate. Top with a scoop of vanilla ice cream, carefully stud sprinkle with berries, then cover with another crèpe and repeat. Top with a third crèpe and serve to gasps of amazement.
