Ingredients2 Venison steaks*
1.2 oz Butter
2 Cloves Garlic
1 cup Red wine
1.5 Tbsp
Macho Liquid Chocolat or
Hacienda Iara 100% Organic Dark Chocolate Purist barSalt and Pepper for seasoning
Method1. Pan fry the steak on both sides in just over half the butter and all of the garlic (keep the venison rare to medium-rare), seasoning with salt and pepper to taste. Set aside to rest.
2. De-glaze the pan with red wine (quite a bit) burn off the alcohol and let reduce a bit.
3. Stir in the remaining butter and grate in the cocoa.
4. Stir until melted and well blended and pour over steaks.
Serving SuggestionsServe with woodland mushrooms lightly fried in garlic and butter, and braised red cabbage.
